Ingredients

  • 1 ½ cups jasmine rice
  • 1 ½ cups water
  • 1 ½ cups thick coconut milk
  • 2 teaspoons minced ginger
  • 2 teaspoons soy sauce
  • 1 plump lemongrass stalk, tender white inner bulb only, minced
  • 15 leaves fresh curry leaves, chopped
  • 15 leaves Thai basil, chopped

Method

  1. Start by rinsing the rice thoroughly under cold water to remove excess starch.
  2. In a saucepan, combine the rinsed rice with water, creamy coconut milk, fresh ginger, soy sauce, fragrant lemongrass, and aromatic curry leaves.
  3. Heat the mixture over medium heat until it reaches a boil, then reduce the heat to low.
  4. Allow the rice to simmer uncovered until it becomes tender, which should take about 10 minutes.
  5. Once cooked, gently fold in fresh basil leaves for an added burst of flavor.
  6. Serve the rice hot, and enjoy its delightful aroma and taste.
