These Barbecue Chicken Quesadillas are a delicious twist on a classic, featuring tender chicken and caramelized onions all melted together with cheese, perfect for a cozy dinner.
Ingredients
1 tablespoon oil
1 medium onions
1 tablespoon honey
2 cups chicken breast
1/2 cup barbecue sauce
4 pieces tortillas
1 cup shredded Cheddar cheese
1 cup Monterey Jack cheese
Method
Begin by preheating your oven to 350°F (175°C).
In a large skillet, pour in a tablespoon of oil and heat it over medium-high flame. Add in the diced onions and sauté until they become translucent, then stir in a splash of honey. Continue cooking until they reach a rich golden brown hue, approximately 5 minutes, and then set aside.
Using the same skillet, pour in the remaining oil and add the chicken pieces. Cook until the chicken is no longer pink, then mix in your preferred barbecue sauce to fully coat the chicken.
Take four tortillas and begin layering them with the chicken mixture, the sautéed onions, and a blend of shredded Cheddar and Monterey Jack cheeses. Top each with another tortilla.
Carefully transfer the stacked tortillas onto a large baking sheet, baking them in the preheated oven for about 20 minutes or until the cheese is completely melted, ensuring the tortillas don’t become overly crispy. Once finished, take them out and cut into quarters for serving.
