These buttery delight tea cookies are a perfect balance of sweetness and nutty flavor, ideal for enjoying with a cup of tea.
Ingredients
1 cup softened butter
1/2 cup powdered sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 cup chopped nuts
as needed none additional powdered sugar for coating
Method
In a large mixing bowl, blend the softened butter with powdered sugar until the mixture becomes airy and fluffy. Add in the vanilla extract and mix well.
In another bowl, whisk together the dry ingredients. Gradually mix this dry blend into the butter-sugar mixture until everything is well combined.
Gently fold in the finely chopped nuts, then form the dough into two balls. Wrap each ball in plastic wrap and place them in the refrigerator for a minimum of one hour.
After chilling, roll the dough out and cut it into 15 to 20 equal pieces, shaping each piece into a small ball. Place these balls on a baking sheet without greasing.
Preheat your oven to 375°F (190°C). Bake the cookies for about 10 to 12 minutes, or until they feel firm but are not browned. While they are still warm, roll the cookies in powdered sugar, let them cool, and then give them a second dusting of sugar for a delightful finish.
