A delightful combination of crispy tater tots and seasoned ground beef, topped with melty cheese and fresh toppings, perfect for a hearty dinner.


Ingredients

  • 1 bag potato nuggets
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 cup nacho cheese dip
  • 1 can diced canned tomatoes
  • 1 cup sliced olives
  • 1 cup shredded Cheddar cheese
  • to taste none taco sauce
  • 2 cups shredded lettuce
  • to taste none sour cream

Method

  1. Preheat your oven to 350°F (175°C).
  2. In a baking dish, spread a generous layer of crispy potato nuggets and bake them until they turn golden brown, about 20 minutes.
  3. Meanwhile, in a large skillet, cook ground beef over medium heat until fully browned, which should take around 10 to 12 minutes. Be sure to drain any excess fat from the skillet.
  4. Mix in taco seasoning and a splash of water, then reduce the heat and let it simmer until the sauce has thickened, approximately 10 minutes.
  5. Layer the cooked beef mixture over the baked potato nuggets, then generously pour nacho cheese dip on top.
  6. Add layers of diced canned tomatoes, sliced olives, and half a cup of shredded Cheddar cheese, finishing with a drizzle of taco sauce.
  7. Return the casserole to the oven and bake until the cheese is melted and bubbling, about 10 minutes.
  8. After baking, sprinkle the remaining half cup of shredded Cheddar cheese on top of the casserole.
  9. Serve the dish over a bed of fresh shredded lettuce and top with a dollop of sour cream.
