Ingredients

  • 3 tablespoons all-purpose flour
  • 1 ½ teaspoons salt
  • ¼ teaspoon ground black pepper
  • 1 pound beef tenderloin
  • ¼ cup butter
  • ½ cup water
  • ½ cup chopped onion
  • 1 clove garlic, cut in half
  • 1 pound mushrooms
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup sour cream

Method

  1. In a bowl, combine flour, salt, and pepper. Coat the beef strips with this seasoned mixture.
  2. In a medium saucepan, melt some butter over medium heat. Add the coated beef and sauté until it turns a rich brown, which should take around 10 minutes. Once browned, carefully remove the beef using a slotted spoon, place it in a covered dish, and keep it chilled while preparing the gravy, leaving the pan unwashed.
  3. Next, pour in water, diced onions, and minced garlic into the same pan. Stir and cook over medium heat, scraping up the flavorful browned bits from the pan for about 5 minutes. Then, add sliced mushrooms and mix in the condensed soup. Continue cooking until the mushrooms soften, approximately 20 minutes.
  4. Finally, return the beef to the pot with the gravy and heat gently over medium heat until warmed through, roughly 5 minutes. Stir in sour cream just before serving to create a creamy finish.
