Coconut-Infused Black Rice Pudding
Ingredients
3 ½ cups
water
1 cup
black rice
¾ teaspoon
salt
1 cup
unsweetened coconut milk
½ cup
white sugar
Method
In a saucepan, mix together water, black rice, and a pinch of salt. Bring the mixture to a boil.
Once boiling, lower the heat, cover the saucepan, and let it simmer for 40 minutes.
After 40 minutes, add in coconut milk and sugar, then bring it back to a boil.
Reduce the heat again and allow it to simmer without a lid until the rice achieves a thick, sticky texture, which should take about 30 minutes.
Let the pudding cool slightly, then give it a good stir before serving.
