Ingredients

  • 3 ½ cups water
  • 1 cup black rice
  • ¾ teaspoon salt
  • 1 cup unsweetened coconut milk
  • ½ cup white sugar

Method

  1. In a saucepan, mix together water, black rice, and a pinch of salt. Bring the mixture to a boil.
  2. Once boiling, lower the heat, cover the saucepan, and let it simmer for 40 minutes.
  3. After 40 minutes, add in coconut milk and sugar, then bring it back to a boil.
  4. Reduce the heat again and allow it to simmer without a lid until the rice achieves a thick, sticky texture, which should take about 30 minutes.
  5. Let the pudding cool slightly, then give it a good stir before serving.
