Ingredients

  • 2 cups coconut milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • a pinch salt
  • 1/4 cup cornstarch
  • 1/2 cup water
  • to taste ground cinnamon

Method

  1. In a saucepan, combine coconut milk, sugar, vanilla extract, and a pinch of salt. Heat the mixture until it boils vigorously, stirring occasionally for about 6 minutes.
  2. In a separate bowl, mix cornstarch with water until it forms a smooth, lump-free paste.
  3. Slowly incorporate the cornstarch mixture into the boiling coconut mixture, whisking constantly until it thickens into a velvety pudding, which should take about 2 minutes. Once thickened, remove from heat and strain the pudding into a clean bowl to ensure a silky texture.
  4. Pour the strained pudding into a mold, baking dish, or individual serving cups. Smooth out the surface and allow to cool for approximately 15 minutes before refrigerating to set for at least 2 hours. Just before serving, lightly dust the top with ground cinnamon for added flavor.
