1 ½ cups self-rising flour, plus more for kneading
1 cup plain Greek yogurt
½ cup prepared pizza sauce
1 cup shredded mozzarella cheese
½ cup pepperoni
Method
In a mixing bowl, combine self-rising flour with Greek yogurt until a dough forms. Transfer to a floured surface and knead for 8 to 10 minutes, adding more flour if necessary to prevent stickiness.
Set your air fryer to preheat at 325°F (165°C) as per the manufacturer's guidelines. Lightly spray the basket with cooking spray.
Divide the dough into four equal portions. Roll each portion into a circle about 1/8-inch thick on a floured surface. Spoon 2 tablespoons of pizza sauce onto the lower half of each circle, then add 1/4 cup of mozzarella cheese and some pepperoni slices. Fold the dough over to create a half-moon shape and seal the edges by crimping.
Place the calzones in the air fryer basket (you may need to do this in batches). Cook for 4 minutes, then flip them and continue cooking for an additional 4 to 5 minutes, or until they are golden brown.
