1 pound boneless skinless chicken breast, sliced in half horizontally

Start by gathering all necessary ingredients including chicken breasts, breadcrumbs, eggs, and the sauce components.
In a mixing bowl, combine ketchup, soy sauce, brown sugar, sherry, Worcestershire sauce, and minced garlic. Stir until the sugar is fully dissolved, then set this katsu sauce aside.
On a clean surface, lay out the chicken breasts and season them generously with salt and pepper.
In a shallow dish, beat some eggs, and in another dish, pour in the breadcrumbs. Dip each chicken piece first into the egg, then coat thoroughly with breadcrumbs. For extra crunch, repeat the egg and breadcrumb coating.
Place the breaded chicken pieces into the basket of your preheated air fryer. Lightly spray the tops with nonstick cooking spray to promote browning.
Cook the chicken for 10 minutes, then carefully flip each piece using a spatula and spray the tops again with cooking spray. Continue cooking for an additional 8 minutes until golden brown.
Once cooked, transfer the chicken to a cutting board and slice it into strips.
