Method
Start by collecting all the necessary ingredients.
In a medium-sized mixing bowl, combine sweetened condensed milk, lime zest, and freshly squeezed lime juice; whisk until smooth.
In a separate bowl, use an electric mixer to whip 1 cup of cream until soft peaks form. Gently fold the whipped cream into the lime mixture until well combined.
Take half of the graham cracker pieces and layer them evenly at the bottom of a 9-inch pie dish, breaking them if needed. Pour half of the lime filling over the crackers and spread it evenly.
Layer the remaining graham cracker pieces on top, followed by the rest of the lime filling, smoothing it out as you go.
Cover the pie and place it in the freezer for about 4 hours or until it is set. Keep the leftover cream refrigerated for serving.
When ready to serve, take the pie out of the freezer and let it sit for 10 minutes. For an extra touch, whip the remaining cream with powdered sugar and vanilla until soft peaks form, then spread or pipe it over the pie. Optionally, garnish with crushed graham crackers and lime zest.
