A hearty and comforting dish featuring a layer of savory beef and vegetables topped with crispy tater tots, perfect for a family dinner.
Ingredients
1 tablespoon olive oil
1 medium sliced onions
1 pound ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon black pepper
10.5 ounces cream of mushroom soup
1 cup green beans
1 cup corn
32 ounces tater tots
1 teaspoon seasoned salt
1 cup shredded cheese
2 tablespoons chopped scallions
Method
Begin by setting your oven temperature to 400°F (200°C).
In a spacious cast iron skillet heated over medium-high flame, add a splash of olive oil to coat the base. Arrange sliced onions evenly and layer the ground beef on top, breaking it into smaller pieces. Allow it to cook without stirring for about 2 minutes, until the onions are soft and translucent.
Combine the beef and onions, stirring them together and continue cooking until the beef is thoroughly browned, which should take another 3 to 4 minutes, stirring occasionally.
Reduce the heat to medium and season the beef mixture with garlic powder, onion powder, and black pepper. Stir for an additional minute, then remove from heat.
Stir in cream of mushroom soup, green beans, and corn to the skillet, mixing everything until well blended.
In a separate bowl, toss the tater tots with seasoned salt until they are evenly coated. Arrange them beautifully over the beef and vegetable mixture in the skillet, ensuring minimal gaps.
Transfer the skillet to the oven and bake for about 1 hour, or until the tater tots are golden and crispy. Once baked, sprinkle shredded cheese and chopped scallions on top, letting it cool for 10 minutes before serving.
