Ingredients
14 ounces tofu
1 can coconut milk
1 medium onion
3 cloves garlic
2 tablespoons curry powder
1/4 cup cilantro
to taste seasoned salt
to taste pepper
enough for frying oil
2 tablespoons butter or margarine
Method
Heat a generous amount of oil in a large skillet over medium-high heat. Carefully add cubed tofu and sprinkle with seasoned salt, frying until the tofu turns a lovely golden brown, which should take around 15 minutes. Once crispy, place the tofu on paper towels to absorb any excess oil and set aside.
Lower the heat to medium in the same skillet and add either butter or margarine to melt. Introduce finely chopped onions and minced garlic, cooking until they soften and release their delightful aroma.
Pour in the rich coconut milk, followed by the curry powder, salt, and pepper. Stir in freshly chopped cilantro to enhance the dish's flavor profile.
Gently fold the crispy tofu back into the skillet, allowing everything to simmer on low for about 15 minutes. Stir occasionally to ensure the tofu is thoroughly coated with the luscious sauce.
