1/2 fresh pineapple, cored and cut into 1 ½-inch pieces
skewers
2 tablespoons minced fresh cilantro (Optional)
1 tablespoon toasted sesame seeds (Optional)
Method
In a small saucepan, mix together water, soy sauce, brown sugar, honey, minced garlic, and grated ginger. Heat over medium-high until it begins to boil, then lower the heat and let it simmer for 8 to 10 minutes until slightly thickened.
Prepare your grill by preheating it to medium-high heat and lightly oiling the grates to prevent sticking.
On skewers, alternate threading shrimp and chunks of pineapple. Arrange these on a serving platter.
Place the skewers on the preheated grill, cooking for 2 to 3 minutes on each side until the shrimp turns opaque and is fully cooked. Reduce the grill heat to low and brush the skewers with the teriyaki sauce on both sides.
Once cooked, transfer the skewers to a serving dish and garnish with fresh cilantro and a sprinkle of sesame seeds.
