Ingredients

  • 2 pounds ground pork
  • ¼ cup white sugar
  • 2 tablespoons fish sauce
  • 6 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 ½ teaspoons baking powder
  • 1 tablespoon water
  • wooden skewers, soaked in water

Method

  1. In a mixing bowl, thoroughly blend together ground pork, sugar, fish sauce, minced garlic, salt, and pepper.
  2. Dissolve baking powder in a tablespoon of water and mix it into the pork mixture until well combined. Cover the bowl with plastic wrap and refrigerate for an hour.
  3. Prepare your outdoor grill by preheating it to medium heat and lightly oiling the grill grates.
  4. Using oiled hands, take portions of the pork mixture and mold them into 1-inch-thick sausages around skewers. Repeat this process with the remaining mixture and skewers.
  5. Place the skewers on the grill, turning them occasionally until they are golden brown and cooked through, which should take about 15 minutes. Once cooked, slice each sausage into bite-sized pieces before serving.
