These light and fluffy potato scones are perfect for breakfast or a delightful snack, combining the richness of mashed potatoes with a tender, buttery texture.
Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon sugar
1/2 cup cold butter
1 cup mashed potatoes
1 large egg
2 tablespoons water
2 tablespoons milk
Method
Preheat your oven to 450°F (230°C) and line a baking tray with parchment paper.
In a large bowl, mix together the flour, baking powder, salt, and sugar. Cut in cold butter until the mixture has a crumbly texture.
Fold in the mashed potatoes, breaking them into smaller pieces as you go. Create a well in the center and add the egg, water, and milk. Use a fork to combine everything into a soft dough.
Turn the dough out onto a floured surface and gently knead it about 6 to 8 times until it holds together. Roll the dough out to a thickness of about 3/4 inch and use a biscuit cutter or glass to cut out rounds.
Place the scones on the prepared baking tray and brush the tops with a bit of milk.
Bake for 15 to 20 minutes, or until the bottoms are beautifully golden brown.
