Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup cold butter
  • 1 cup mashed potatoes
  • 1 large egg
  • 2 tablespoons water
  • 2 tablespoons milk

Method

  1. Preheat your oven to 450°F (230°C) and line a baking tray with parchment paper.
  2. In a large bowl, mix together the flour, baking powder, salt, and sugar. Cut in cold butter until the mixture has a crumbly texture.
  3. Fold in the mashed potatoes, breaking them into smaller pieces as you go. Create a well in the center and add the egg, water, and milk. Use a fork to combine everything into a soft dough.
  4. Turn the dough out onto a floured surface and gently knead it about 6 to 8 times until it holds together. Roll the dough out to a thickness of about 3/4 inch and use a biscuit cutter or glass to cut out rounds.
  5. Place the scones on the prepared baking tray and brush the tops with a bit of milk.
  6. Bake for 15 to 20 minutes, or until the bottoms are beautifully golden brown.
