A delicious Mediterranean-inspired chicken casserole, combining tender chicken with a vibrant roasted red pepper puree and topped with melted mozzarella.
Ingredients
1 pound chicken breast
2 tablespoons olive oil
1 cup roasted red peppers
1 cup diced tomatoes
1 cup sliced mushrooms
1 medium onion
2 cloves garlic
1 cup mozzarella cheese
to taste none salt
to taste none pepper
Method
Preheat your oven to 350°F (175°C) and lightly coat a medium-sized baking dish with cooking spray.
In a pan, heat a tablespoon of olive oil over medium heat and cook the chicken until it's thoroughly done and the juices run clear.
Puree the roasted red peppers using a blender or food processor until smooth.
In the prepared baking dish, mix together the cooked chicken, pepper puree, diced tomatoes, sliced mushrooms, chopped onions, and minced garlic. Season the mixture with salt and pepper according to your preference.
Drizzle the remaining olive oil on top and sprinkle mozzarella cheese over the entire dish.
Bake in the oven for 30 minutes, or until the cheese is melted and bubbly.
