Ingredients

  • 2 (3 ounce) packages instant ramen noodles
  • 1/4 cup creamy peanut butter
  • 3 tablespoons reduced-sodium soy sauce
  • 1 1/2 tablespoons honey
  • 1 tablespoon Sriracha,
  • 2 teaspoons sesame oil
  • 2 green onions, thinly sliced
  • 2 tablespoons peanuts
  • 3 lime wedges

Method

  1. Start by boiling a generous pot of water on high heat, then add your ramen noodles, cooking them for 3 to 5 minutes until they reach your preferred tenderness.
  2. In a separate bowl, combine peanut butter, soy sauce, honey, sriracha, and sesame oil, whisking together until you achieve a smooth and creamy mixture.
  3. Once the noodles are cooked, save about 1/2 cup of the pasta water and drain the rest. Quickly toss the drained noodles into the peanut butter sauce, mixing well to ensure every strand is coated. If you like a thinner sauce, gradually stir in the reserved pasta water, adding a tablespoon at a time.
  4. Serve the ramen in individual bowls, topping each one with sliced green onions, crushed peanuts, and fresh lime wedges for a zesty finish.
