Peanut Chicken Stir-Fry with Rice

Ingredients

  • 4 cups water
  • 2 cups uncooked white rice
  • 3 tablespoons soy sauce
  • 2 tablespoons creamy peanut butter
  • 2 teaspoons white wine vinegar
  • ¼ teaspoon cayenne pepper
  • 3 tablespoons olive oil
  • 4 skinless, boneless chicken breast halves - cut into thin strips
  • 3 tablespoons chopped garlic
  • 1 ½ tablespoons chopped fresh ginger root
  • 2 ½ cups broccoli florets
  • ¾ cup chopped green onions
  • ⅓ cup unsalted dry-roasted peanuts

Method

  1. In a saucepan, combine water and rice. Bring the mixture to a boil over medium-high heat. Once boiling, lower the heat, cover, and let it simmer until the rice is soft and the water is absorbed, which should take around 20 minutes.
  2. While the rice cooks, mix together soy sauce, creamy peanut butter, vinegar, and a pinch of cayenne pepper in a small bowl. Set this flavorful sauce aside.
  3. In a skillet or wok, heat olive oil over high heat. Add diced chicken, minced garlic, and grated ginger, cooking them together until the chicken is golden brown, which should take about 5 minutes.
  4. Reduce the heat to medium and introduce chopped broccoli, sliced green onions, and the prepared soy sauce mixture to the skillet. Stir frequently until the broccoli is tender and the chicken is fully cooked, about 5 more minutes.
  5. Serve the savory peanut chicken and broccoli stir-fry over the fluffy cooked rice.
