Ingredients

  • 8 ounces tempeh
  • 1 cup bread
  • 1/4 cup Parmesan cheese
  • 1 large egg
  • 2 tablespoons parsley
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Method

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking sheet.
  2. In a saucepan, bring water to a boil and add the tempeh. Cook for about 5 minutes to soften its flavor, then drain and let it cool.
  3. Using a food processor, crumble some bread into fine crumbs, then place them in a large mixing bowl. Crumble the cooled tempeh into the bowl with the bread crumbs.
  4. In the same bowl, add grated Parmesan cheese, an egg, finely chopped parsley, oregano, basil, garlic powder, salt, black pepper, and a hint of red pepper flakes. Mix everything well using your hands.
  5. Form the mixture into small balls, roughly 1 inch in diameter, and arrange them on the prepared baking sheet.
  6. Bake the tempeh bites in the oven for 10 minutes, then carefully turn them over and bake for an additional 10 minutes until they are golden brown.
