1 medium head cauliflower, grated and squeezed dry
6 ounces diced ham
1 large egg
5 tablespoons shredded Cheddar cheese
ΒΌ cup all-purpose flour
2 green onions, chopped
1 tablespoon olive oil
1 teaspoon black pepper

Method
In a large bowl, combine cauliflower, diced ham, a beaten egg, shredded Cheddar cheese, flour, sliced green onions, oil, and a dash of pepper until the mixture is well blended.
Preheat the waffle iron to its highest setting and coat both surfaces with nonstick spray.
Scoop 1 cup of the cauliflower mixture into the center of the waffle iron, reserving the remaining batter in the refrigerator.
Close the waffle iron and cook for approximately 10 minutes.
Carefully lift the waffle out with a spatula and fork, then repeat the cooking process with the remaining batter.
