This Savory Taco Tater Tot Casserole is a delicious blend of seasoned beef, tater tots, and melted cheese, all layered with enchilada sauce for a hearty meal that's sure to please everyone.


Ingredients

  • 1 pound ground beef
  • 1 cup frozen corn
  • 1 can black beans
  • 1 medium onion
  • 2 cloves garlic
  • 1 packet taco seasoning
  • 2 cups Mexican cheese blend
  • 32 ounces tater tots
  • 1 cup enchilada sauce

Method

  1. Preheat your oven to 375°F (190°C) and lightly spray a 9x13-inch baking dish with non-stick spray.
  2. In a skillet over medium heat, cook the ground beef until it's browned, about 5 to 7 minutes. Add in the frozen corn, black beans, chopped onion, minced garlic, and taco seasoning, then cook for another 10 minutes. Set aside to cool a bit.
  3. In a large bowl, mix the beef mixture with about three-quarters of the Mexican cheese blend and the tater tots until everything is well combined.
  4. Pour one-third of the enchilada sauce into the bottom of the prepared baking dish. Spread the tater tot mixture over the sauce, pressing it down gently to create an even layer. Drizzle the remaining enchilada sauce over the top.
  5. Bake in the preheated oven for 40 minutes. Afterward, sprinkle the remaining cheese on top and return to the oven for another 5 minutes, or until the cheese is melted and bubbling.
