Ingredients

  • 1 pound ground chicken
  • 2 tablespoons spring onions
  • 3 tablespoons sake
  • 1 cup water
  • a sprinkle cornstarch
  • 1 tablespoon ginger
  • 3 tablespoons soy sauce
  • 1 cup shiitake mushrooms
  • 1 cup daikon
  • a touch sugar

Method

  1. In a large bowl, mix together ground chicken, finely chopped green onions, a tablespoon of sake, a tablespoon of water, a dash of cornstarch, freshly grated ginger, and a teaspoon of soy sauce. Use your hands to combine until the mixture becomes sticky and homogeneous, then shape it into small, round balls.
  2. Heat a splash of oil in a wok or deep skillet over medium-high heat. Add the chicken balls and cook until they are golden brown on each side, which should take around 3 minutes.
  3. Once the meatballs are nicely browned, add in shiitake mushrooms and thinly sliced daikon. Stir the mixture for about a minute until everything is well coated in the oil.
  4. Next, pour in a cup of water along with two tablespoons of sake, mirin, two tablespoons of soy sauce, and a hint of sugar. Cover the skillet and let it simmer for approximately 10 minutes to allow the flavors to blend beautifully.
