Ingredients
1 pound ground chicken
2 tablespoons spring onions
3 tablespoons sake
1 cup water
a sprinkle cornstarch
1 tablespoon ginger
3 tablespoons soy sauce
1 cup shiitake mushrooms
1 cup daikon
a touch sugar
Method
In a large bowl, mix together ground chicken, finely chopped green onions, a tablespoon of sake, a tablespoon of water, a dash of cornstarch, freshly grated ginger, and a teaspoon of soy sauce. Use your hands to combine until the mixture becomes sticky and homogeneous, then shape it into small, round balls.
Heat a splash of oil in a wok or deep skillet over medium-high heat. Add the chicken balls and cook until they are golden brown on each side, which should take around 3 minutes.
Once the meatballs are nicely browned, add in shiitake mushrooms and thinly sliced daikon. Stir the mixture for about a minute until everything is well coated in the oil.
