Ingredients

  • 8 ounces bacon
  • 2 cloves minced garlic
  • 1 medium onion
  • 1 cup diced tomatoes
  • 1 cup pineapple chunks
  • 4 cups cooked rice
  • 2 tablespoons ketchup
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 2 large eggs
  • 1 medium cucumber
  • 2 stalks green onions
  • 1/4 cup fresh cilantro
  • 1 medium lemon
  • 2 medium chili peppers

Method

  1. Heat a large skillet or wok over medium heat and add diced bacon. Cook until crispy and golden brown, about 5 minutes. Remove the bacon and reserve the rendered grease in a bowl.
  2. In the same skillet, add 2 tablespoons of the reserved bacon grease and increase the heat to medium-high. Sauté minced garlic until fragrant, approximately 30 seconds. Add chopped onions and cook until soft and translucent, stirring for 2 to 3 minutes.
  3. Incorporate diced tomatoes and pineapple into the skillet, stir-frying for about 2 minutes until heated through.
  4. Raise the heat to high and add another tablespoon of bacon grease. Stir in the cooked rice, breaking it apart with a spatula. Stir-fry for about 3 minutes, then season with ketchup, soy sauce, sugar, and a touch of white pepper.
  5. Make a well in the center of the skillet and pour in beaten eggs. Stir-fry until eggs are nearly set, around 2 to 3 minutes. Mix the eggs into the rice and fold in the crispy bacon.
  6. Serve the flavorful fried rice hot, garnished with cucumber slices, chopped green onions, fresh cilantro, lemon wedges, and sliced chili peppers for a zesty finish.
