2 large skinless, boneless chicken breast halves, cut into bite-size pieces
1 (12 ounce) package broccoli coleslaw mix
1 teaspoon sesame oil, or to taste
½ cup water
½ cup peanut sauce (such as House of Tsang®), or to taste
1 pinch salt to taste
Method
In a skillet, warm olive oil over medium-high heat and add the chicken, cooking it until it's fully cooked through and the juices run clear, which should take about 5 minutes.
Stir in the broccoli slaw mixture along with sesame oil and a splash of water.
Allow the mixture to simmer on medium-low heat until the liquid reduces and the broccoli slaw becomes tender, approximately 15 minutes.
Finally, mix in the peanut sauce and a pinch of salt for enhanced flavor.
