Ingredients

  • 2 tablespoons olive oil
  • 2 large skinless, boneless chicken breast halves, cut into bite-size pieces
  • 1 (12 ounce) package broccoli coleslaw mix
  • 1 teaspoon sesame oil, or to taste
  • ½ cup water
  • ½ cup peanut sauce (such as House of Tsang®), or to taste
  • 1 pinch salt to taste

Method

  1. In a skillet, warm olive oil over medium-high heat and add the chicken, cooking it until it's fully cooked through and the juices run clear, which should take about 5 minutes.
  2. Stir in the broccoli slaw mixture along with sesame oil and a splash of water.
  3. Allow the mixture to simmer on medium-low heat until the liquid reduces and the broccoli slaw becomes tender, approximately 15 minutes.
  4. Finally, mix in the peanut sauce and a pinch of salt for enhanced flavor.
