Begin by preheating your oven to 400°F (200°C). Prepare the pork tenderloin by removing any silver skin and generously seasoning it with salt, pepper, minced garlic, and herbes de Provence.
In a large skillet that can go in the oven, heat some oil over medium-high heat until it shimmers. Sear the pork tenderloins for about 5 minutes, or until they develop a nice golden crust and can be easily lifted from the pan. Flip them over and cook for an additional 3 minutes without moving them. Pour in some wine and let it simmer for 1 minute.
Transfer the skillet to the preheated oven and bake the tenderloins for 15 to 19 minutes, or until they are just slightly pink in the center. Use an instant-read thermometer to check for an internal temperature of at least 145°F (63°C).
Once done, take the skillet out of the oven and let the pork rest for 5 to 10 minutes before slicing. Serve with the delicious pan juices for added flavor.
