2 pounds sweet potatoes
1 cup sugar
1 can evaporated milk
1/2 cup butter
1/2 cup corn syrup
2 large eggs
1/4 cup flour
1 teaspoon vanilla extract
1 teaspoon apple pie spice
1 pinch salt
1 prepared pie crust
Method
Preheat your oven to 350°F (175°C) and line a baking dish with aluminum foil.
Place the sweet potatoes in the prepared dish and roast them until they're tender, which should take about 30 to 45 minutes. Once roasted, let them cool, peel off the skins, and transfer the flesh to a mixing bowl.
Mash the sweet potatoes until smooth using a potato masher. Then, with an electric mixer, combine the mashed sweet potatoes with sugar, evaporated milk, melted butter, corn syrup, eggs, flour, vanilla extract, apple pie spice, and a pinch of salt, mixing until light and fluffy for about 5 minutes.
