Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced onion
  • ½ cup diced green bell pepper
  • ½ cup diced celery
  • 1 ½ teaspoons chopped garlic
  • 1 cup converted long-grain white rice
  • 4 ounces smoked sausage, cut into slices
  • 4 ounces cooked ham, cut into bite-size pieces
  • 2 (10 ounce) cans diced tomatoes with green chile peppers
  • 1 cup chicken broth
  • ¼ teaspoon dried thyme
  • 1 bay leaf
  • 2 (15 ounce) cans ranch-style beans, undrained

Method

  1. In a large pot, warm up some oil over medium heat.
  2. Add chopped onion, diced green bell pepper, and finely chopped celery. Sauté until the onion turns soft and translucent.
  3. Mix in minced garlic and continue to cook for an additional minute.
  4. Incorporate the rice along with sliced sausage and diced ham. Stir frequently for 2 to 3 minutes to ensure the rice is well-coated with the oil.
  5. Pour in diced tomatoes with green chiles and add chicken broth.
  6. Season the mixture with dried thyme and a bay leaf.
  7. Bring everything to a boil, then lower the heat and cover the pot.
  8. Let it simmer for 20 to 25 minutes until the liquid is fully absorbed.
  9. Stir in the beans, ensuring everything is mixed well, and heat through before serving.
