Spiced Thai Iced Tea


Ingredients

  • 4 1/4 cups water
  • 4 pods cardamom
  • 3 whole star anise
  • 3 whole cloves
  • 1/8 teaspoon cinnamon
  • 1/2 teaspoon tamarind paste
  • 1/3 cup white sugar,
  • 5 bags rooibos tea
  • 2 bags black tea
  • 3/4 cup coconut milk

Method

  1. Begin by filling a saucepan with water and heat it over medium-high flame until it reaches a boil.
  2. While the water is heating, gently crush cardamom pods using a mortar and pestle or the flat side of a knife. Once crushed, add these along with star anise, cloves, cinnamon, and tamarind to the boiling water, then reduce the heat and let it simmer for about 5 minutes.
  3. After the spices have infused their flavors, introduce tea bags into the mixture and stir well. Once the water starts to simmer again, switch off the heat and allow the tea to steep for an additional 5 minutes.
  4. Incorporate sugar into the tea mixture, then let it rest for another 5 minutes. After this time, strain the tea into a container, making sure to squeeze the tea bags to extract all the flavor. Cover the container and place it in the refrigerator to chill for approximately 1 hour.
  5. When ready to serve, take a tall glass filled with ice, pour in the chilled spiced tea, and finish it off with a generous amount of coconut milk for a creamy touch.
