Ingredients

  • 2 tablespoons red curry paste
  • 1 red bell pepper, thinly sliced
  • 1 small onion, chopped
  • 1 (14 ounce) can coconut milk
  • 1 tablespoon fish sauce
  • 3 cups homemade chicken stock
  • 2 cups shredded cooked chicken
  • 1 ½ cups cooked basmati rice
  • 4 tablespoons chopped fresh cilantro

Method

  1. In a large saucepan, heat curry paste over medium-high heat until fragrant and the oils begin to separate, about 1 to 2 minutes.
  2. Add diced red bell pepper and sliced onion, cooking and stirring until they soften, approximately 5 minutes.
  3. Pour in coconut milk and mix thoroughly until completely integrated.
  4. Stir in fish sauce and then add chicken broth to the mixture.
  5. Lower the heat and let the soup simmer gently for 15 minutes.
  6. Incorporate the pre-cooked chicken and rice, stirring until everything is heated through.
  7. Before serving, sprinkle with freshly chopped cilantro for added flavor.
