Ingredients

  • 1 pound flank steak
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 2 cups cooked rice
  • 1 cup diced tomatoes
  • 2 cups romaine lettuce
  • 1 cup tortilla chips
  • 1 cup black beans
  • 1/4 cup sliced jalapenos
  • 2 units lime wedges
  • 1/2 cup cotija cheese
  • 1/4 cup fresh cilantro
  • 2 units ripe avocados
  • splash N/A water
  • 1/2 cup sour cream
  • 2 tablespoons lime juice
  • 1 clove minced garlic
  • 1 N/A pinch of salt

Method

  1. Preheat a grill or frying pan over medium-high heat until it begins to smoke lightly.
  2. In a mixing bowl, combine garlic powder, chili powder, kosher salt, smoked paprika, and ground cumin; generously rub this spice mixture over the flank steak.
  3. Cook the seasoned flank steak in the hot grill pan for approximately 4 minutes on each side, or until it reaches your desired doneness. Once cooked, let the steak rest for 10 minutes before slicing it thinly against the grain.
  4. In two serving bowls, create layers with cooked rice, diced tomatoes, chopped romaine lettuce, crunchy tortilla chips, black beans, sliced jalapenos, and lime wedges; top each bowl with the sliced steak, crumbled cotija cheese, and a sprinkle of fresh cilantro.
  5. For the dressing, blend ripe avocados with a splash of water, 1/2 cup of fresh cilantro, sour cream, lime juice, minced garlic, and a pinch of salt until the mixture is smooth and creamy. Drizzle this dressing over the prepared bowls.
