Ingredients
1 tablespoon butter
1/2 cup green chiles
1 cup diced tomatoes
4 large eggs
1 cup tortilla chips
1 cup Cheddar cheese
4 pieces flour tortillas
4 tablespoons taco sauce
Method
Begin by melting butter in a large skillet over medium heat, then add in green chiles and chopped tomatoes. Sauté for about 5 minutes until the tomatoes are soft.
Crack the eggs into the skillet and stir gently to combine, breaking the yolks as you go. Cook for 2 to 3 minutes until the eggs are fully scrambled and just set.
Once the eggs are cooked, fold in crushed tortilla chips, mixing them gently. Move this mixture to one side of the skillet, then turn off the heat and layer Cheddar cheese on top. Cover the skillet and let it rest for 5 minutes to allow the cheese to melt.
While the cheese is melting, place your flour tortillas on a microwave-safe plate and warm them in the microwave for about 30 seconds.
Finally, fill each warm tortilla with the cheesy egg mixture and drizzle taco sauce over the top, using about a tablespoon for each taco.
