These spicy tuna and black bean quesadillas are a delicious and quick meal option, perfect for dinner or a filling snack. With a zesty kick from Buffalo sauce and a cheesy finish, they are sure to please anyone at the table.
Ingredients
1 can canned tuna
1 can black beans
1/2 cup sour cream
1/2 cup corn
2 tablespoons Buffalo wing sauce
1 teaspoon garlic salt
1 teaspoon cumin
1.5 teaspoons butter
4 pieces tortillas
1 cup Mexican cheese
Method
In a large mixing bowl, blend together the tuna, black beans, and sour cream until smooth. Add in corn, Buffalo wing sauce, garlic salt, and cumin, mixing well.
Melt 1 1/2 teaspoons of butter in a large skillet over medium heat. Place a tortilla in the skillet and warm it for approximately one minute, then flip it over.
Spread half of the tuna mixture on the warmed tortilla, sprinkle with half of the Mexican cheese, and place another tortilla on top.
Cover the skillet and cook the quesadilla for one minute. Carefully flip it, cover again, and let it cook until the cheese is melted, about 1 to 2 more minutes.
Repeat this process with the remaining butter, tortillas, and filling. Once all quesadillas are cooked, slice each into 8 wedges to serve.
