4 cups tart cherries
1/2 cup brown sugar
1/2 cup granulated sugar
2 tablespoons tapioca

Method
Start by heating your oven to 400°F (200°C).
In a spacious mixing bowl, combine tart cherries with brown sugar and granulated sugar, mixing gently until the sugars are well blended. Incorporate tapioca, almond extract, cinnamon, and a dash of salt, ensuring thorough mixing. Let this mixture rest for 15 minutes.
