Ingredients

  • 1 cup chocolate chips
  • 1 cup heavy cream
  • 2 tablespoons bourbon
  • 12 pieces marshmallows
  • 1 cup graham crackers
  • 1 cup additional chocolate chips

Method

  1. Start by placing half of the chocolate chips into a mixing bowl. Prepare a baking sheet by lining it with parchment paper for easy cleanup.
  2. In a small saucepan, warm the cream over medium heat until it gently simmers. Pour the hot cream over the chocolate chips and let it rest for 1 to 2 minutes. Stir until the mixture transforms into a smooth ganache, then gradually whisk in bourbon until fully blended. Note that the ganache will thicken as it cools.
  3. Using a fork, pierce one end of a marshmallow, being cautious not to push it through. Toast the marshmallow over a medium-low flame, rotating until all sides are golden brown and it puffs up, which should take about 1 minute per side. Hold the marshmallow high to allow it to puff without burning, avoiding toasting the forked end.
  4. After toasting, place the marshmallow on the lined baking sheet and gently slide it off the fork with another fork. Allow a moment for the top to sink, creating a hollow center. Repeat this for all marshmallows and refrigerate them for 10 minutes.
  5. In a microwave-safe bowl, melt the remaining chocolate chips, stirring every 15 seconds until completely smooth, which should take about 1 to 2 minutes. Let it cool slightly.
  6. Dip the top and bottom of each toasted marshmallow in the melted chocolate, then roll them in crushed graham crackers. Return them to the refrigerator for another 10 minutes to set.
  7. Once chilled, whisk the ganache until it becomes light and fluffy. Fill a piping bag or a plastic bag with a corner cut off with the fluffy ganache and pipe it into each marshmallow. Finally, adorn each 'hot tub' with a teddy bear-shaped graham cracker.
