Ingredients

  • 1 sheet puff pastry
  • 2 cups shredded Cheddar cheese
  • 1 cup pulled pork
  • 1 cup drained beans
  • 1 can RO-TEL tomatoes
  • 1/4 cup chopped green onions
  • 1 tablespoon taco seasoning
  • 1/4 cup cotija cheese

Method

  1. Start by heating your oven to 375°F (190°C).
  2. Prepare a large parchment paper sheet, around 13x18 inches, and lay it flat on your work surface. Unroll the puff pastry and place it on the parchment so the edges slightly overlap.
  3. With a floured rolling pin, roll out the edges and seams to create a smooth, unified sheet that measures approximately 12x17 inches. Carefully move the parchment with the pastry onto a 13x18-inch baking tray.
  4. Sprinkle 1 cup of shredded Cheddar cheese evenly over the pastry base, followed by a generous layer of pulled pork. Add drained beans and RO-TEL tomatoes on top, then sprinkle chopped green onions, taco seasoning, and another cup of Cheddar cheese.
