Ingredients
1 pound ground pork
1/2 cup oats
1 medium carrot
1/4 cup water
2 tablespoons fish sauce
3 cloves garlic
1 tablespoon lemongrass paste
1 teaspoon ginger
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
1 large egg
2 tablespoons coconut oil
1 can coconut milk
2 tablespoons curry paste
1 tablespoon brown sugar
1 tablespoon fresh lime juice

Method
Start by adding ground pork to a sizable mixing bowl.
Pulse oats in a mini food processor until they have a coarse texture, then sprinkle over the pork. Clean the processor to prevent flavor blending.
In the cleaned processor, blend together carrot, water, fish sauce, garlic, lemongrass paste, ginger, salt, and red pepper flakes until smooth, about 10 to 15 seconds. Pour this mixture over the pork.
Incorporate an egg into the pork mixture and blend everything thoroughly. Form the mixture into about 24 meatballs, each approximately 1.5 inches in diameter.
Heat coconut oil in a large skillet over medium heat and brown the meatballs for 2 to 3 minutes on each side. Once browned, transfer the meatballs to a bowl.
In the same skillet, whisk together coconut milk, curry paste, brown sugar, and fish sauce, allowing the sauce to simmer. Return the meatballs to the skillet and cook for an additional 8 to 10 minutes until cooked through. Adjust seasoning with salt and squeeze fresh lime juice over the top. Remove from heat and garnish with fresh cilantro before serving.
