3 tablespoons Thai sweet chili sauce, or more to taste
1 tablespoon Worcestershire sauce
1 teaspoon white sugar
2 pounds boneless, skinless chicken breast, or more to taste, cut in bite-size pieces
2 tablespoons olive oil
3 tablespoons sweet pickle relish
3 tablespoons lemon juice
2 tablespoons honey
2 cups coleslaw mix
Method
Position the oven rack approximately 6 inches from the heating element and preheat the broiler. Arrange the hamburger buns, cut-side up, on a baking sheet in a single layer.
Broil the buns for about 30 to 60 seconds until they are golden and toasted.
In a large skillet over medium heat, melt some butter. Add chopped onion, tomato paste, and minced garlic, cooking until the onion becomes soft, which should take about 5 minutes. Mix in chili sauce, Worcestershire sauce, and a touch of sugar.
Introduce diced chicken and a drizzle of olive oil to the skillet; continue to cook, stirring often, until the chicken is fully cooked and no longer pink, around 5 to 10 minutes.
In a separate large bowl, combine relish, lemon juice, and honey. Stir in the coleslaw mix until well coated.
Spoon the chicken mixture into the toasted buns and generously top with the coleslaw.
