Ingredients

  • 3 cups packed fresh basil leaves, washed and thoroughly dried
  • 2 large cloves garlic
  • ¼ cup pine nuts, lightly toasted
  • ½ teaspoon kosher salt
  • ½ cup extra-virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • 2 teaspoons freshly squeezed lemon juice

Method

  1. Start by combining fresh basil leaves and minced garlic in a food processor; pulse about eight times until they are finely chopped.
  2. Next, introduce the toasted pine nuts and a pinch of salt, then turn the processor on low.
  3. While blending, slowly pour in olive oil through the feed tube until the mixture is smooth and well combined.
  4. Add freshly grated Parmesan cheese and a splash of lemon juice, then pulse twice more to blend everything together.
