Ingredients

  • 1 (1 ounce) package ranch dressing mix
  • 2 cups mayonnaise
  • ¾ cup chopped green onion
  • 1 pound bacon slices
  • 5 pounds unpeeled red potatoes

Method

  1. Start by boiling a large pot of lightly salted water. Once boiling, add whole potatoes and cook them until they are tender, which should take about 15 to 20 minutes. After cooking, drain the potatoes and cool them under cold running water. Once cooled, cut them into 1-inch cubes and place them in a spacious serving bowl. Chill in the refrigerator until completely cold.
  2. While the potatoes are chilling, mix together ranch dressing mix, mayonnaise, and chopped green onions in a small bowl. Cover this mixture and place it in the fridge for at least an hour to let the flavors meld together.
  3. For the bacon, wrap it in paper towels and lay it on a plate. Microwave until crispy, which will take approximately 15 minutes based on your microwave's wattage. Let the bacon cool before handling.
  4. Once the potatoes are chilled and the mayonnaise mixture is ready, combine the two by pouring the dressing over the potatoes and tossing gently to coat evenly. Crumble the cooled bacon over the top and give it a quick stir. Serve your zesty potato salad immediately for the best flavor.
