Ingredients
1 head cauliflower florets
2 tablespoons olive oil
to taste none salt
to taste none black pepper
1/4 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon Sriracha
2 stalks green onions
to taste none toasted sesame seeds
Method
Begin by preheating your oven to 400°F (200°C) and adjust the rack to the top third of the oven. Line a large baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, add the cauliflower florets and pour in olive oil, salt, and pepper. Toss until the florets are evenly coated with the oil and seasonings.
Arrange the cauliflower in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
Roast the cauliflower in the preheated oven for approximately 30 minutes, or until it becomes tender and has a lovely caramelized color.
Meanwhile, prepare the zesty sauce by combining sweet chili sauce, soy sauce, and Sriracha in a small saucepan over medium-high heat. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.
Once the cauliflower is done roasting, remove the baking sheet from the oven and drizzle the prepared sauce over the florets. Toss gently to coat all pieces with the sauce.
Plate the roasted cauliflower and garnish each serving with sliced green onions and a sprinkle of toasted sesame seeds for added flavor and crunch.
