This Zesty Southwestern Beef Bake combines savory ground beef with a medley of flavorful ingredients, topped with melted Cheddar cheese for a delightful casserole that's perfect for family dinners.
Ingredients
1 pound ground beef
2 tablespoons butter
1 medium onion
1 packet taco seasoning
1 cup tomato sauce
1 cup broth
1 cup corn
1 can black beans
1 box Spanish rice mix
1 cup salsa
1 cup Cheddar cheese
Method
Preheat your oven to 350°F (175°C).
In a skillet over medium-high heat, cook the ground beef until browned, about 6 minutes, breaking it up as it cooks. Drain any excess fat.
Add butter and diced onion to the skillet, cooking until the onion becomes tender and fragrant, roughly 5 minutes. Mix in the taco seasoning and tomato sauce until well combined.
Stir in the broth, corn, black beans, Spanish rice mix, and salsa, ensuring all ingredients are thoroughly mixed.
Spray a casserole dish with nonstick cooking spray and pour the beef mixture into it. Top generously with shredded Cheddar cheese.
Bake in the preheated oven until the cheese is melted and the dish is bubbling, approximately 20 minutes.
