Ingredients

  • 1/2 small green cabbage
  • 1 English cucumber
  • 1/2 bunch cilantro, chopped
  • 1 bunch green onions
  • 1 cup carrots
  • 1 jalapeno
  • 1/2 cup shelled edamame
  • 1 (15 ounce) can navy beans,
  • 2 cups cooked chicken
  • 1/2 cup dry roasted peanuts
  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 1 2-inch piece) fresh ginger
  • 1 clove garlic,
  • 1/4 teaspoon salt
  • 2 teaspoons peanut butter
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1/3 cup oil,

Method

  1. In a spacious bowl, mix together shredded cabbage, diced cucumber, chopped cilantro, sliced green onions, grated carrots, minced jalapeno, edamame, navy beans, diced chicken, and crushed peanuts.
  2. In a separate bowl, combine vinegar, freshly squeezed lime juice, grated ginger, minced garlic, salt, creamy peanut butter, soy sauce, and honey. Whisk these ingredients together until smooth.
  3. Gradually add oil to the dressing while continuing to whisk until thoroughly blended. Pour this flavorful dressing over the chicken and vegetable mixture and gently toss to evenly coat.
  4. You can serve this salad right away or store it in the fridge until you're ready to enjoy.
