Ingredients

  • 1 pound ground chicken (preferably white meat)
  • 1 red onion, halved and thinly sliced
  • ¼ cup sliced scallions (mostly white parts)
  • 1 lime, juiced
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon finely chopped fresh mint (Optional)
  • 2 teaspoons minced fresh ginger
  • 1 teaspoon lemongrass paste (Optional)
  • 1 teaspoon fish sauce, more to taste
  • 1 teaspoon red pepper flakes, more to taste
  • salt to taste

Method

  1. In a large skillet, warm over medium heat and add ground chicken, cooking while breaking it apart until browned, roughly 5 minutes.
  2. Incorporate chopped onions and scallions, cooking until the onions become tender and the chicken achieves a golden hue, about 2 minutes.
  3. Stir in lime juice, chopped cilantro, fresh mint, minced ginger, lemongrass, fish sauce, and a sprinkle of red pepper flakes. Cook for an additional 3 minutes, letting the flavors meld together.
  4. Adjust seasoning with sea salt to your preference before serving.
