Ingredients

cilantro, coarsely chopped, or to taste

fresh basil, coarsely chopped, or to taste
Method
In a sizable mixing bowl, combine rice vinegar, sesame oil, sugar, minced ginger, chopped lemongrass, and soy sauce to create a flavorful dressing.
Add thinly sliced cucumbers, diced jalapeno, and fresh cilantro and basil to the bowl, tossing everything together until well coated.
